Corn Paneer

Ingredients:
• 1 cup
frozen corn thawed in the microwave for 1
minute
• 1 tsp. lemon juice
• 2 large tomato diced
• 1 tsp. dhaniya (coriander) powder
• 1 tsp. jeera (cumin) seeds
• ½ tsp. haldi (turmeric) powder
• 1 tsp. red chili powder
• 2 tsp. Vegetable oil
• Salt according to taste
• Paneer made from ½ gallon milk and cut in
1/2 cube
Method:
Mash the thawed corn in a blender/food processor
till it turns into a thick paste.
Heat oil in a nonstick pan, once it is heated,
add jeera (cumin) seeds, and cook till it turns
brown.
Add coriander, turmeric and chili powder and
stir for 2 minutes on high flame.
Now add chopped tomatoes. Stir it for another 4
minutes on high flame.
Reduce the heat and bring it to medium, add
mashed corn to the pan.
Stir for another 2 minutes, then add paneer and
salt.
After stirring the whole thing for a minute or
two, cook on medium heat for about 10 minutes.
