
Fish with Coconut Milk

Ingredients:
- 2 tablespoons vegetable oil
- 1 Small onion, thinly sliced
- 1/8 teaspoon turmeric
- 1 clove garlic, crushed
- ˝ teaspoon grated ginger
- 1 teaspoon green pepper, finely chopped
- ˝ teaspoon crushed red pepper
- 1 pound cod, halibut or snapper
- 1 1/2 teaspoons salt
- 2 tablespoons water
- 2 medium potatoes, cooked and quartered
- 1 cup thick coconut milk
- juice of 2 limes
Heat vegetable oil and sauté onion until golden
brown. Add turmeric, garlic, ginger, green pepper and crushed red pepper. Fry 2 or 3 minutes. Put in fish which has been cut into serving pieces, salt it and sprinkle on water. Cook about 5 minutes. Add potatoes and coconut milk. Simmer until fish is tender, watching carefully. Remove from heat and add lime juice. Serve hot.
