Fish with Coconut Milk

Ingredients:

  • 2 tablespoons vegetable oil
  • 1 Small onion, thinly sliced
  • 1/8 teaspoon turmeric
  • 1 clove garlic, crushed
  • ˝ teaspoon grated ginger
  • 1 teaspoon green pepper, finely chopped
  • ˝ teaspoon crushed red pepper
  • 1 pound cod, halibut or snapper
  • 1 1/2 teaspoons salt 
  • 2 tablespoons water
  • 2 medium potatoes, cooked and quartered
  • 1 cup thick coconut milk
  • juice of 2 limes

Heat vegetable oil and sauté onion until golden brown. Add turmeric, garlic, ginger, green pepper and crushed red pepper. Fry 2 or 3 minutes. Put in fish which has been cut into serving pieces, salt it and sprinkle on water. Cook about 5 minutes. Add potatoes and coconut milk. Simmer until fish is tender, watching carefully. Remove from heat and add lime juice. Serve hot.
