- 2 mangoes
- 2 bananas
- 2 oranges
- 2 ounces black grapes
- 2 ounces green grapes
- 1 papaya
- Grated peel and juice of 1 lime
- ¼ cup superfine sugar
- Freshly ground black pepper to taste
- Plain yogurt, to serve
Peel and seed mangoes and cut flesh into thin slices, reserving any
scraps. Peel and diagonally slice bananas.
Peel and section oranges, working over a bowl to catch juice. Halve and
seed both black and green grapes. Peel and halve papaya, scoop out seeds
and cut flesh in to slices, reserving any scraps. Put fruit in a serving
bowl and stir sugar and scraps of mango and papaya in blender or food
processor fitted with the metal blade and process until smooth. Add lime
peel and pepper. Pour over fruit and chill at least 1 hour before serving
with yogurt.
Makes 4 to 6 servings.
Note: Substitute other fruits such as melon, guava or pineapple, if
preferred.
