Lauki ka Raita

Ingredients:

• Lauki
• Yogurt - 200 grams
• Dry mustard powder - 1½ tsp (For mustard powder - grind mustard seeds to a fine powder in a mixer)
• Green chilies - 2-3
• Ginger – ½ inch
• Salt to taste (~ 1-tsp)
• Fresh coriander leaves.

Method:

Cut a medium size lauki into small rectangular pieces. Steam lauki in a pressure cooker (1 whistle only).

Strain the water and allow it to cool. Add green chili (2-3), ginger, mustard powder and salt to yogurt.

Add the lauki and garnish with fresh coriander (dhaniya) leaves.
