Mewa Ka Soup (Soup
of various nuts)

Ingredients:
- 2 oz (50g) each: cashews, almonds and
walnuts
- 2 tablespoonful ghee
- 1 1/2 pints (900ml) Creamy milk
- 1 tablespoonful chopped onion
- ½ pint (300ml) vegetable stock
- Pinch of grated nutmeg
- Sea Salt and freshly ground Black
pepper, to taste
- 3 tablespoonful finely chopped
coriander leaves.
Coarsely grind the nuts. Reserve some,
sauté, in ghee, and save for later garnishing.
Place the rest of the nuts in a saucepan;
add milk and bring to a boil. Remove from heat and rub mixture through a
sieve.
In a separate saucepan, heat ghee and
sauté the onion. Then add sieved nut mixture and stock and cook over
medium heat for another 10 minutes. Stir in nutmeg and seasoning.
Serve hot, garnished with sautéed nuts
and sprinkled with chopped coriander leaves. Previous Page |
