  • 8 chicken thighs
  • 8 floz canned tomatoes, drained
  • 2 tablespoon(s) tomato paste
  • 2 tablespoon(s) chili sauce
  • 2 tablespoon(s) sugar
  • 1 tablespoon(s) garam masala
  • 2 tablespoon(s) soy sauce
  • 2 inch piece of ginger-root, grated
  • 2 garlic cloves, crushed
  • 2 teaspoon(s) juice of lime and lemon
  • 1 peel of lime and lemon, for garnish

Chicken in Spicy Sauce Directions

  1. Rinse chicken, pat dry with paper towels. Slash meaty parts of chicken two or three times.
  2. Place chicken in a shallow non-metal dish and set aside.
  3. Put tomatoes, tomato paste, chili sauce, sugar, garam masala, soy sauce, gingerroot, garlic, limejuice, and lemon juice in a blender and process until pureed.
  4. Pour over chicken, cover, and refrigerate 2-3 hours to marinade.
  5. Preheat oven to 375° Fahrenheit. Put chicken and the sauce in a roasting pan and cook, uncovered for 45-50 minutes, or until tender, basting with sauce two or three times during cooking.
  6. Serve hot, garnished with twists of lime and lemon.
