  • 6 piece(s) Small Karelas (Bitter Gourd)
  • 1 teaspoon(s) Ground pepper (for marinating)
  • 1 cup(s) Low-fat yogurt (for marinating)
  • 1 tablespoon(s) Ginger-garlic paste (for marinating)
  • 2 tablespoon(s) Chili powder (for marinating)
  • 1 teaspoon(s) Turmeric powder (for marinating)
  • 1 tablespoon(s) Garam Masala powder (for marinating)
  • 1 teaspoon(s) Salt (or as desired) (for marinating)
  • 1 cup(s) Roasted onion paste (for stuffing)
  • 0.25 cup(s) Roasted chana powder (sattu) (for stuffing)
  • 1 tablespoon(s) Tamarind pulp (for stuffing)
  • 1 teaspoon(s) Salt (or as desired) (for stuffing)

Bharwaan Karela (Stuffed Bitter Gourd) Directions

  1. Peel karelas, apply salt over it and keep aside for an hour. By doing this, the bitterness of karela will be reduced.
  2. Slit the karela and remove the pulp.
  3. Add turmeric powder to boiling water and blanch the karela in this water. Remove from water and cool it.
  4. Mix all the ingredients for the stuffing with the karela pulp.
  5. Fill the karelas with the stuffing. Mix the ingredients for marination and smear the karela with it. Leave it for an hour.
  6. Heat a tbsp of oil in a pan. Arrange the karelas side by side. Close the lid and cook for 15 minutes.
  7. Turn the karelas and cook again.
